Coconut Banana Bread
Mix mashed bananas, shredded coconut, flour, sugar, and baking soda. Bake until golden and fragrant for a delightful homemade coconut banana bread.
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup coconut oil, melted
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup shredded coconut
- Optional: 1/2 cup chopped nuts (walnuts, pecans)
- Optional: 1/2 cup chocolate chips
Directions
Preheat the oven to 350°F (175°C) and grease a loaf pan.
In a mixing bowl, combine the mashed bananas, melted coconut oil, sugar, eggs, and vanilla extract. Mix until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the banana mixture, stirring until just combined.
Fold in the shredded coconut and, if desired, the chopped nuts and chocolate chips.
Pour the batter into the prepared loaf pan and smooth the top.
Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the banana bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
